It would be cool if they finally managed to strip rumple of his powers, but because he is so addicted and can't be without magic he goes to regina's vault and steals cora's spell book, he smells the magic and then he gains dark magic again. Only that, this time around he won't be as powerful as he was before. Making him a potencial threat again, but this time regina and emma can fight him because he is no longer the dark one (with his superior power). I would like that twist

I know what you mean.  I was driving to work this morning, and we just had a mild snowfall last night (maybe an inch), and all I could do was think "Do you want to build a snowman?" all the way in.

I must be missing something here, because I thought that "true love's kiss" would turn him back into an ordinary man. In fact, he did actually started turning back when Belle first kissed him. Can someone please explain why that no longer works?

My only question about that is how would Rumple know to disguise himself as Hook? He only saw Belle kissing Will, he didn't know that Belle and Hook were friends.

I think that Hook was the obvious choice.  Belle has the dagger, so he can't impersonate her. But both belle and Hook have a common shared misery, and both would like to make sure Rumple never gets the dagger back. (probably more so that anyone else). And, unfortunately, Belle is just that one trusting person who can be easily fooled. (I would say it's almost unrealistic, except that I know people that are exactly like that).

Also, of all the people available, Hook is probably the easiest for Rumple to impersonate, since they have know each other as long as they have. and Hook has that little edge of Pirate to him, making him just a touch darker than the other Heroes.

Minor observation. When "Hook" and  Belle were in the Pawnshop, she asked him something and he replied "Yes". 

Did the real Hook EVER use the word "Yes" instead of "Aye"? 

Am I nitpicking? Was that intentional?

That is not nitpicking at all. That is attention to the details. Because, let's face it, We know it was Rumple in disguise, but it was still Colin that was portraying the role of Hook. He's put a lot of work into building the role of Hook, and now he has to play Rumple portraying Hook. That is a huge mental jump in character portrayal.

By the way, I though Colin did an excellent job with those scenes, Because he did certain things that tipped me off early that it was Rumple in disguise, which if he had been playing full on Hook, would probably not have been seen.
